Rose, Vanilla and White Chocolate Chequerboard Cake






I have made a cake inspired by the popular battenberg. This is however a cake with a vanilla and rose sponge chequerboard sandwiched with a little apricot jam. It is iced with a white chocolate and mascarpone frosting and finished with edible rose petals and ground vanilla.

The cake itself is very light and spongey. The rose flavour is just the right strength to come through the taste of the vanilla cake and match with the white chocolate. I am very happy with its look apart from perhaps the very pink inside colour. A more purpley colour would perhaps have suited the petals on top more. Other than that it is a good day's work!
