Rosemary, Garlic and Thyme Shallot and Potato Cake

I have made a delicious potato accompaniment. This is my welsh potato and onion cake made with shallots and flavoured with rosemary, thyme and garlic.

The potatoes were buttery and soft with a delicious flavour from the herbs and seasoning added. It looked beautiful and also turned out of the pan perfectly. It was spot on with minted lamb and onion gravy. One of the tastiest dinners I have had in a while!
