Morning Glory Cookies

My sister's birthday required some special cookies. This is my biscuity take on one of her favourite cakes, the morning glory cake. It omits the carrot and apple as I wasn't sure on their keeping quality, however are instead an American style cookie filled with oats, desiccated coconut, raisins, and flavoured with cinnamon.

They were slightly soft in the centre so a great cookie consistency and were robust enough to withstand a journey to Newcastle. They were a gratefully received birthday present indeed!
