Coconut and Rhubarb Macaroons
I have baked some whisked biscuits. These are some coconut macaroons topped with dessicated coconut and a spoonful of my caramelised rhubarb jam.
The macaroons are crisp on the outside and soft and chewy in the centre. The rhubarb flavour is sweet and delicious, complimenting the coconut wonderfully. I haven't yet sussed my oven out yet in terms of meringue however as they seem to take a long time to bake. More experiment needed I think.
