Red Wine Plum, Mascarpone and Macadamia Crumble Pots
I have been using up some of my leftovers and poached plums in red wine then layered it with a cream and mascarpone mixture and a macadamia crumble made with light muscovado sugar.
The crumble was one of the best I have made. It was crisp and crunchy and even withstood the moisture of the cream in the layers. The flavour of the plum was subtle yet perfectly balanced with the rest. They are delicious little desserts.
