Herbs de Provence Fougasse





I have been venturing into continental breads once again and ticking another thing off my list of bakes I want to make. I have made a traditional fougasse flavoured with a homemade herbs de provence mix.

The dough was wet and sticky and rose like a focaccia to produce uneven air bubbles. It baked wonderfull to give a crisp flatbread texture on the outside and soft dough on the inside. The herbs were subtle but had just enough flavour to make it more than just a loaf of bread. It was delicious!
