Sticky Toffee Fig Cakes





I have been using my new individual square traybake tin to make a seasonal bake. It is a dark muscovado sugar sponge with half a fresh fig inside each one. It is drizzled with a star anise infused toffee sauce.

The cake is very light and soft. The fig baked to be squidgy and sweet and the toffee sauce has the perfect balance of star anise. The cakes were meant to be almost like an upside down cake with the fig half however the batter was too runny and rose above and over the fig. This however makes for perhaps an even better cake with a hidden fig centre. A deliciously autumny bake!
