Fig, Orange Blossom Honey and Mascarpone Tart
I have been doing some seasonal baking using fresh autumn figs. I have made a sweet shortcrust pastry case and filled it with orange blossom honey flavoured mascarpone. It is drizzled with more honey, sprinkled with pistachios and topped with fig quarters.
The pastry is crisp and short, although it did take a bit too long to blind bake. I'm not sure I have mastered my new oven completely yet! The filling is sweet and creamy with the honey flavour just subtle but delicious.
