Banana Crème Brulee Tarts
This is something I have been wanting to make for a while, a crème brulee tart. This is a cardamom spiced shortcrust pastry case filled with caramelised banana slices, vanilla baked custard and topped with a grilled 'burnt' caramel layer. A couple of extra pieces of banana top it off.
The pastry was perfectly spiced with a lovely hint of cardamom but one that is subtle enough to just compliment but not over power the banana. The caramelised banana is sweet and delicious with a strong flavour. The caramel topping was made using caramel ground down to a powder and then sprinkled on top and grilled which produced a fantastic crack on the top of the custard. My criticism would be not enough custard. A smaller deeper tart, or one large tart would definitely solve this.
