Blackcurrant, Ginger and Poppyseed Brandy Snap Cones
I have been playing petit fours today. I made some ginger spiced brandy snaps sprinkled with poppyseeds and filled them with a blackcurrant cream filling and chopped pistachios.
The brandy snaps cooked to brown and lacy and shaped better than I thought. The cream was supposed to be rippled rather than pink but, for I think the first time ever, I under whipped it so had to mix it more than anticipated, folding in the blackcurrant pieces more than I would have liked. Despite this, the cream did end up a lovely pink shade contrasting the brandy snap and pistachios perfectly. A little more ginger next time and they would have been perfect.
