Currant Bun Baked Doughnuts
I made a change to my normal dough making and ventured into baked instead of fried doughnuts. These were made using baking powder rather than yeast and are flavoured similar to a currant bun. They are a vanilla dough with currants topped with a fondant icing, glacé cherry pieces and spiced walnut pieces.
The doughnut batter was very wet and rose to form an almost bubbly doughnut. it is slightly dense but not heavy. It is a delicious doughnut. The icing is sweet and is much needed with the slightly plain vanilla doughnut. I think they look cute and taste great.
