Pumpkin, Red Onion and Parmesan Crumble
Tonight's dinner was a savoury crumble using seasonal flavours. I thought I ought to start using my pumpkin so added some of it to some red onion and flavoured it with garlic, thyme and sage. It is topped with a parmesan crumble topping.
The flavours of the filling are slightly sweet but wonderfully seasoned. The topping is crunchy, crumbly and cheesy. I thought it would be a little dry however it turned out just right, with enough moisture coming from the pumpkin and cheese to off set any dryness. Delicious!
