Strawberry and Rhubarb Pannacotta

Today I have been using the rest of my rhubarb to make a pannacotta. It is vanilla flavoured and topped with a strawberry and rhubarb compote.

The pannacotta itself is a lovely consistency, although needs a little more of a wobble. The fruit topping is sweet and has a lovely fresh flavour. It is a great dessert!
