Lemon and Parsley Salmon en Croute




My family have been treated to a salmon en croute. It is a homemade puff pastry wrapped around a section of my filleted whole salmon and filled with creme fraiche flavoured with lemon and parsley.

The pastry is crisp and light with a good puff. It baked without a soggy bottom so I am very happy. The flavours are great and the whole thing came together wonderfully.
