Rhubarb and Orange Scones with Caramelised Rhubarb Jam and Orange Cream






I have used some of my Grandma's home grown rhubarb to make some orange and lightly cardamom flavoured scones with rhubarb pieces and a sugar crust, filled with a caramelised rhubarb jam and orange flavoured whipped cream.

The scones were better than I first thought as they were soft on the inside and crisp on the top thanks to the sugar crusting. The jam overcooked and so it caramelised however this made it sweeter, allowing it to cut through the slight sourness of the rhubarb and blandness of the cream. All in all, a great success!
