Raspberry and Strawberry Eton Mess Traycake

I have made a cake for my work colleagues of a whisked sponge traycake flavoured with vanilla and filled with fresh strawberries and raspberries. It is topped with the fruit and crushed meringue pieces.

The cake is very light and soft with a delicious taste. The sweetness of the fruit is wonderful contrasting the plain cake. The meringues on top are very crisp and crunchy. It is lovely.
