Blueberry and Passionfruit Cake
I have been making a summer inspired layered cake. It is an egg white sponge flavoured with lemon zest and dotted with blueberries. It is soaked in a lemon syrup and filled with lemon and passionfruit curd. The cake is frosted in italian meringue, drizzled with passionfruit and decorated with dessicated coconut.
The cake itself is light and has a lovely crumb. The flavour is delicious with the sweet blueberries taking it to an extra level. It is moist with a lovely curd filling. The frosting is well aerated and the texture contrasts the cake perfectly. It is a sweet and tasty bake!
