Stem Ginger and Fennel Seed Biscuits

These are some biscuits flavoured with stem ginger pieces, ground ginger and crushed fennel seeds. They are dipped in dark chocolate and decorated with fennel seed pieces and stem ginger.

The biscuit has a great flavour with the heat of the ginger being the perfect subtlety and marrying well with the fennel. The chocolate compliments the tastes perfectly. They required perhaps another couple of minutes in the oven to crisp up the middle but aside from that I am very happy indeed.
