Cranberry, Almond and Pistachio Iced Nougat with Raspberry Coulis

This is the iced nougat that has been in the freezer for about 2 months. It is an almost frozen mousse like dessert flavoured with honey, dried cranberries, chopped almonds and chopped pistachios. I served it with raspberry coulis and toasted flaked almonds.

The nougat wasn't set like ice cream but light, aerated and soft. The flavour was sweet and subtle however it all came together to make a lovely summer pudding.
