Peach Melba Upside Down Cake

This is an upside down cake made with light brown sugar, macadamia nuts, peach pieces and layered with raspberry jam. The topping is peach slices and light brown sugar.

The cake is light and spongy. The caramelised flavour and sweet fruit topping and jam makes it perfect for a dessert.
