Walnut Rye Loaf
This is a wholemeal and rye loaf sweetened with a dash of honey and filled with chopped walnut pieces.
The dough is light and soft with a deep flavour. The crunch of the walnut pieces adds a pleasant texture. It was perfectly proven although perhaps a few minutes underbaked but for some reason I struggled to get it to sound hollow. It also caught a little in the oven but aside from that I am very happy!
