Peach, Thyme and Ricotta Cakes
These are some miniature sandwich cakes of a lemon and thyme sponge, ricotta cream and peach filling and a topping of ricotta, peach and thyme leaves.
The sponge was very light and soft with a beautifully subtle flavour. The ricotta adds a slightly savoury feel to a sweet bake, contrasting the peach perfectly. They are delicious. I'm not completely sure about their look but I'm not too displeased.
