Raspberry, Peppermint and Chocolate Meringues

These are some miniature pink meringues flavoured with peppermint extract, freeze dried raspberry pieces and decorated with dark chocolate.

The meringues are very crisp and light. The peppermint is strong enough but not over powering, and the chocolate adds a welcome darkness to it. They are lovely little sweet bites.
