These are some chelsea buns filled not with dried fruit and spices but a fresh pineapple curd. The dough is flavoured with basil
The dough is some of the softest and lightest dough I have made and the subtle basil flavour from the milk infusion perfectly compliments the sweet pineapple flavour. The textures and tastes are a thing of perfection. I could eat the whole lot in one go!
