Asparagus and Wensleydale Quiche
This is a savoury quiche of a shortcrust pastry tart filled with asparagus and a wensleydale cheese egg mixture. It was sprinkled with more cheese.
The pastry is light and crisp, although despite blind baking I somehow have a slightly greasy patch in the middle. It tastes cheesy and the asparagus gives it a fabulous spring feel. A great tea!
