Ginger Caramel, Fruit and Nut Millionaire's Shortbread
This is my quirky take on some millionaire's shortbread. They are a plain shortbread base topped with ginger infused caramel with stem ginger pieces. They are sprinkled with macadamia nuts, flaked almonds, raisins and dried cranberries, and are drizzled with white and dark chocolate.
The shortbread was very short and crisp; it was one of the best I have made. The caramel set perfectly despite a few challenges of it burning on the pan. The topping is a great accompaniment. They were tricky to slice due to the nuts and fruit ending up being pushed into the caramel if I wasn't careful so I had to remove them, slice and retop. I need to find a better way of doing this!
