Rhubarb and Cream Cheese Butterfly Cakes

I have been made some mini butterfly cakes with rhubarb jam and cream cheese filling.

The cake is light and spongy made better by inclusion of ground almonds in the batter. The rhubarb jam is flavoursome and sweet, and the cream cheese off sets it all with a slightly savoury feel. They are fabulous and look very cute!
