Banana, Maple and Pecan Traycake
This is a banana cake filled with chopped pecans and made with soft brown sugar and maple syrup. It is topped with a maple cream cheese topping and chopped pecan nuts.
The cake is light and moist with a deliciously sweet flavour from the banana and the syrup. The frosting posed many challenges as I overbeat it due to the formation of lumps. This meant I had to add some gelatine so it would set. The resulting topping was lovely and smooth. It is definitely a cake for someone with a sweet tooth!
