Lemon Curd Soufflé
Today I have mastered the last of my baking endeavours. I have made a lemon soufflé with a spoon of homemade lemon curd in the bottom.
It was tangy and lemony with the lemon curd adding a welcome extra depth of flavour. It was light and rose well. Perhaps two more minutes in the oven would have set the centre a little more, but the texture wasn't a problem at all. It was slightly gooey still and so absolutely delicious.
