Black Forest Ganache Tart

This is a dessert made for Ascot. It is a chocolate shortcrust pastry case with a cherry jam, chocolate and kirsch ganache and topped with cherries.

The pastry is short, crisp and chocolatey with a sweet jam and boozy rich chocolate filling. It looks the part and tastes it too!
