Lavender and Raspberry Gateau Paris Brest
At long last I have found some edible lavender so I have made a summery Gateau Paris Brest of choux pastry with flaked almonds and icing sugar decoration. The rounds are filled with lavender and raspberry whipped cream and fresh raspberries.
The choux is light, puffed and perfectly crisp. I returned it to the oven cut open to ensure it dried out properly. The cream has a beautifully subtle lavender flavour and the raspberries compliment this well. All is needed is perhaps a little more sugar in the cream to elevate the flavours and contrast the slightly sour raspberries. Other than that, they are delicious.
