Cherry and Coconut Bakewell Tarts

These are some individual tarts of shortcrust pastry filled with cherry jam and topped with coconut and almond frangipane. They are sprinkled with dessicated coconut.

The pastry is short and crisp and the jam sweet. The topping is soft and perfectly set. The coconut flavour comes through and well compliments the cherry. They are heavenly.
