Summer Vegetable Homity Pie
This is my version of a homity pie. It is a hot water pastry case filled with a mixture of asparagus, spring onion, beans and broccoli in a parsley creme fraiche sauce. The topping is potato chunks sprinkled with breadcrumbs and cheddar cheese.
The pastry case is robust and crisp due to it being a hot water pastry, perfect for a pie destined for a summer picnic. The filling is well flavoured, creamy and delicious. The topping is a great addition, with a fantastic crunch from the breadcrumbs. It could use a little more cheese so the flavour is stronger, but other than that it is a delicious pie.
