Queen Cake



A cake fit for the Queen on her 90th Birthday. This is a victoria sponge cake filled with jam and vanilla buttercream, coated with homemade sugarpaste and topped with a sugarpaste decoration.

Never again, is all I can say. I never use sugarpaste, and now I know why. The cake itself is light, well flavoured and has a lovely texture. The buttercream is smooth and works perfectly with the sweet strawberry jam. The icing was the part that posed difficulties. I made my own sugarpaste for the second time, and I think it was a little dry hence my difficulties rolling it out, and its rapid setting. I did not quite roll out the main layer big enough so needed to do some patchwork. The colours are great, thanks to my new food colouring. It did, however, run a little into the white. I am reasonably pleased with the results, although it isn't quite as perfect as I would have liked. I am also a little concerned with the inside as the jam and buttercream pushed out the sides a little when icing. I don't think I can complain too much based on the size of cake and my lack of experience. I hope my Scout group enjoys!
