Salmon, Courgette and Sundried Tomato Picnic Basket Pie
Once again it is time for a savoury bake, and this is one destined for a summer picnic. It is a pastry similar to that used in cornish pasties, featuring a mix of lard and butter, and is filled with layers of salmon, sundried tomato paste and courgette.
The pastry around the outside and top of the pie is robust but with a crisp and light texture, however the decorative rim is slightly harder due to the amount I played with it when shaping, making it a little tricky to cut. The filling is delicious, with the flavour of the sundried tomato being strong and complementing the salmon perfectly. I would perhaps include a little more courgette in future as it shrunk considerably more than I expected, but other than that it is delicious and I am very happy with how it turned out.
