Mexican Beef Samosas
These are a Mexican version of a popular Indian snack. They are samosas of homemade filo pastry filled with beef strips, pepper and red onion cooked in a fajita style marinade.
The pastry is wonderfully light and crisp, with lovely layers, as expected from filo. The filling is spicy and very well flavoured. The beef has previously proved tough and chewy, but it seems that its combination with the vegetables, and the baking in the samosa made this not the case. These are absolutely delicious, and the flaky pastry is a lovely carrier of the fajita filling, contrasting the usual soft tortilla wrap.
