Bacon and Onion Tear and Share Rolls



I have baked a tear and share loaf. It is made of thyme flavoured rolls filled with a mixture of onion, bacon and garlic, topped with more thyme.

The dough was a little wetter than I intended to make it therefore it was hard to shape and I ended up proving it in a tin instead of on a tray. However, this led to a lovely crown loaf with the buns just the right distance apart so they join but are easy to tear apart. The bread itself has a lovely crumb and light texture due to the moisture content, and is baked perfectly. The filling is delicious and works very well at the centre of the rolls.
