Rhubarb and Passionfruit Naked Cake
One of the fashions in baking that I haven't ventured into yet is the naked cake. This is a whisked vanilla sponge layered with vanilla buttercream, rhubarb and passionfruit.
The cake has a light, delicate flavour and texture and so is the perfect sponge to carry the fresh fruit and the vanilla buttercream. The whole thing is delicious and is perfect for a summer afternoon treat. I would have liked to have been able to make three layers out of the bottom sponge, however my inability to cut straight hindered this. Also, the smaller sponge concertina a little upon cooling as I tried to remove it from the tin. Another time I would bake it in a non-greased tin and cool it upside down like a chiffon cake to avoid this. Other than that I am very happy.
