Blueberry and Cranberry Meringue Pie



I have baked a fruity meringue pie. This is a shortcrust pastry case with a blueberry and cranberry jam and topped with meringue.

The pastry is short and not too sweet with a lovely crunch. The jam contrasts this well and makes it a bit different to the traditional lemon filling. The meringue topping is crisp on the outside and soft on the inside. I did, however, have the typical problem of the sugar weeping out of my meringue making it taste rather sweet. This is due to either under baking or a cold jam. Next time I would make an italian or swiss meringue so it is more stable and the sugar does not weep out.
