Apple Crumble Entremet
These are my light summery take on a traditional British dessert. They are entremet based on an apple crumble and custard featuring a brown sugar sable biscuit base, a vanilla custard mousse, apple centre, nutmeg crumble topping and a dried apple crisp.
The biscuit is buttery with a rich flavour from the brown sugar. It provides a crisp base to a light dessert. The mousse is creamy and tastes wonderfully of vanilla. The apple centre perhaps required a little more sweetness, and there could have been more of it, but it goes well with the brown sugar and vanilla tastes. The crumble is crunchy and adds a great texture contrast. I was possibly a little heavy handed with the nutmeg however it gives a warm spiced background. I am incredibly pleased with the look of these desserts. They are better than I expected, although did pose a few challenges such as managing to create a slightly too set mousse to finish it well without a little improvisation, Other than that, I can't complain.
