Orange, Almond and Cointreau Danish
This is a large version of an almond danish. It is a danish pastry dough with a centre of an almond, orange and cointreau mixture similar to a frangipane, and sprinkled with flaked almonds.
The pastry rose a little more than expected in the fridge. I think it perhaps had a little too much yeast, and my fridge got a bit warm in this hot weather. This means that the pastry is slightly more dough-like than intended, however it still has the desired flakiness and lightness for a danish. The filling took a long time to bake through, needing almost an hour in the oven. It does have a lovely flavour and a good texture, with the right balance of orange and almond. This is not perfect, but a good start to what could be a fantastic idea.
