Peach and Blackberry Loaf



This is a seasonal sweet dough loaf. It is a dough filled with peach chunks and topped with fresh peach slices and blackberries.

The dough has a rich flavour and lovely texture somewhat resembling that of a brioche dough. It therefore needs no additional flavour other than the fresh fruit. It perhaps requires a little more fruit to be kneaded into the dough, which would aid in a better distribution. I would also put the blackberries closer to the centre of the loaf so they don't roll off the sides. Other than this the tangy blackberry taste and sweet peaches match well and are delicious.
