Spiced Banana Couronne



I thought you couldn't beat a traditional cinnamon bun, but I have put that to the challenge today. This is my couronne filled with a light muscovado sugar buttercream spiced with cinnamon, ginger and cardamom along, and topped with fresh banana slices. It is glazed with warmed honey and drizzled with a water icing.

The bread itself has a lovely soft crumb and light texture. It was perfectly risen, and very well baked. The spices are perfectly balanced together and give a warming feeling, perfect for a wet spring day. The caramelised banana sweetness is fabulous with the butter filling and elevates something fairly simple in flavour into being heavenly. I did not have enough dough to make a proper couronne as intended, aiming for a hole in the centre, however I think it looks elegant and very inviting.
