Earl Grey and Vanilla Shortbread



This is my first time baking with tea. These are some shortbread biscuits made with a mixture of traditional flour and semolina, flavoured with earl grey tea leaves and vanilla.

The biscuits is crisp and light with a wonderful crunch from the semolina, and the flavours are delicious. It was, however, not without fault. The biscuits spread hugely in the oven so I had to recut them once baked. I think this is a combination of too much butter and not enough chilling, surprising bearing in mind how cold it is in my kitchen at the moment. A few improvements needed on this one I think.
