Cherry and Chocolate Pudding with Chocolate Kirsch Custard
This is a chocolate steamed suet pudding with dried cherries and served with a chocolate custard flavoured with kirsch.
The suet pudding is moist and soft, and not claggy as I feared it might be. The cocoa powder and dark muscovado sugar give it a rich chocolate flavour that is delicious with the cherries. The custard marries beautifully with the pudding, giving a lovely boozy kick. It wasn't without problems in the making though. It seemed that every time I added chocolate to the milk the chocolate split, therefore I ended up resorting to a cornflour and cocoa powder mixture. The final result is a custard that is light works well with the dark chocolate sponge.
