Blackcurrant and Cassis Roulade
This is my chocolate roulade. It is a sponge made from separated eggs, sugar and cocoa powder, dusted with icing sugar and filled with double cream and a blackcurrant cassis jam.
The roulade has an inviting homemade look to it from my lack of confidence in rolling, with the jam oozing out the edges wonderfully. It also has the characteristic cracks of a good roulade. It is fudgey and chocolatey, with a slightly sweetened cream filling and a strong blackcurrant flavour in the jam, enhanced by the cassis. The flavours marry deliciously. I wish blackcurrants were in season all year round! It is a lovely dessert. Obviously, my perfectionism would like it to be a little better rolled but aside from that I can't complain.
