Carrot and Orange Cakes
These are some miniature cakes baked for a bake off competition at the 20th birthday party of the local 'The Point' theatre. They are carrot cakes filled with raisins and chopped pecans, spiced with cinnamon and nutmeg and topped with orange buttercream, an orange marzipan carrot with rosemary stalk, and chopped pecan soil.
The cakes have a light and delicate texture with a subtle spiced flavour. The buttercream is full of orange and adds an extra sweetness and creaminess. The marzipan carrot looks very cute and gives the cakes an attractive look, making them resemble a carrot in a flower pot. The rosemary is delicious with the orange, adding an extra kick which I think would be delicious added also to the cake. These are now officially my signature cake.
