Mojito Trifle



This is my take on a mojito, in trifle form. It features sponge fingers soaked in a rum, lime and mint syrup, lime curd and mint whipped cream, all decorated with fresh mint leaves and candied lime peel.

The syrup has a boozy kick and was soaked up perfectly by the light sponge fingers. The lime curd is tangy and slightly sharp which works well with the sweet syrup. The cream perhaps needs a little more icing sugar, but the mint flavour is delicious. I should have whipped the cream a little less so it was easier to spread and create the layers. With these couple of improvements it would be spot on.
