Courgette and Poppyseed Muffins



I have been using more seasonal produce. I have made some miniature muffins made with courgette, and flavoured with lemon zest and poppyseeds.

The cakes are very moist due to the courgette and the oil content. They baked to be just browned and wonderfully soft, with a fantastic crunch from the poppyseeds. The lemon flavour enhances the taste wonderfully and complements the courgette well. They are not very sweet but just right, and delicious nonetheless.
