Sugar Crusted Palmiers
These are some treats for my work colleagues. They are some palmier biscuits made from puff pastry filled with granulated sugar and dipped in more sugar.
I did have a few problems with getting these to bake properly in my temperamental oven. It seems that a higher temperature is required to get them to brown. So, the sugar caramelised wonderfully on the second batch I baked once I had done so. They are crisp and light with a deliciously sweet flavour. I am happy with these. They can take some perfecting and refining, but they're not too bad!
